Lotus root production volume in Japan 2012-2021
In 2021, approximately 51.5 thousand metric tons of lotus roots were produced in Japan, the lowest amount of the past decade. The highest lotus root production of the last ten years was achieved in 2013 when numbers peaked at around 63.5 thousand tons.
In Japanese cuisine, lotus roots are commonly served in nimono dishes (boiled and seasoned vegetables) or as tempura.
