The global market for gluten-free food is expected to expand considerably between 2022 and 2032, from 6.7 billion U.S. dollars to 14 billion U.S. dollars. Gluten is a type of protein found in wheat, rye and barley which has been the center of controversy over the last several years. Although gluten is typically associated with bread and baked goods, it can be found in many different types of foods and beverages.
Gluten-free retail
Gluten-free products experienced a sales growth of six percent between 2015 and 2016 in the United States, which was a much lower rate than in previous years. Between 2012 and 2013, sales of gluten-free products in the United States increased by 81 percent. The types of gluten-free foods and beverages which make up the largest share of the U.S. market are bakery products as well as dairy/dairy alternatives.
Consumer behavior
Gluten-free foods are not only consumed by those suffering from celiac disease, a hereditary condition in which the body cannot properly digest and process gluten; some consumers choose to abstain from gluten for dieting purposes or other health benefits. A 2017 survey of U.S. consumers who eat gluten-free bread found that 31 percent do so as a lifestyle choice.
