Since 2000, the overall per capita consumption of dairy has increased in the U.S. In 2021, consumption was at about 661 pounds per person. As of 2022, consumption had decreased by about eight pounds per person.

All per capita consumption figures are calculated using resident population plus the Armed Forces overseas, except fluid milk figures, which are calculated using resident population only.
