Yogurt and barbecue sauces are the condiments which saw the highest growth in sales volume in Italy in 2017. Their sales volume grew by 56.1 percent and 7.4 percent respectively. While the yogurt sauce has Mediterranean roots, the barbecue sauce has its origin in the North American food culture.

According to Canadians, barbecue sauce should combine sweet and sour flavors. 36 percent of surveyed Canadians would suggest adding a kick of heat, while 22 percent of them would prepare it in a way that guests could not pinpoint the ingredients. In 47 percent of cases, people living in the Canadian region of Manitoba would even have a secret recipe for their barbecue sauce.

Yogurt and barbecue sauces are still a niche in the Italian condiments market , as the greatest share of the sales value is held by mayonnaise with 123.8 million euros. Ketchup follows with 41.7 million euros.
