Average household purchases of cakes, buns and pastries have decreased in volume, while the average expenditure per person has increased. Unfrozen cakes and pastries are the most popular product category purchased by consumers, with spending on chilled cakes in particular increasing year on year. Although a majority of cakes are purchased pre-made, a small share of consumers continue to bake their own from scratch or by using mixes.
