The largest share of Japanese consumers seasoned Japanese-style dishes (washoku) according to their own preferences as revealed in a survey conducted in June 2021. While 45.3 percent of respondents followed their own methods for seasoning dishes, only close to four percent were following local customs to impart flavors to their food.
