Farmers have had to adapt to climate change which has been impacting yearly harvests in recent years. For example, some farmers have put in place a "reserve system." It is used to compensate for the unpredictable variations in crop yield from one year to the next and also to be able to meet market demands. Regarding the production of Champagne, the reserve stock of grapes has fluctuated between 2016 and 2023. The lowest figure (132 million bottles) was reached in 2021, while 2023 recorded the highest number of the period (263 million bottles).
