According to a survey conducted in March 2021, fatty tuna (ōtoro) was the sushi topping consumers in Japan most often refrained from eating at conveyor-belt sushi restaurants, with almost 25 percent of respondents. Obtained from the fatty belly parts of a blue fin tuna, ōtoro is sweeter and lighter in color than the medium-fatty tuna meat (chūtoro).
