In 2018, an average bakery in the Netherlands made nearly half of its turnover through the sales of bread. Cakes sales, which in Dutch refer to both "gebak" (pastries) and "vlaaien" (flans, or a type of pies) amounted for just over 30 percent of the average bakery turnover. According to the source, 96 percent of the bakeries in the Netherlands sold cakes, and 87 percent had bread in its assortment.
