In Italy, the greatest share of the professional espresso machines used in the Ho.Re.Ca channel in 2019 was made up by traditional manual machines. This type of professional machines reached a value of about 30 million euros. According to data released by CoffeeBi, the value of fully automatic professional espresso machines amounted to about 10 million euros.
Traditional and automatic machines differ in many aspects. In the traditional or lever espresso machines, coffee grains get freshly grounded and, most importantly, the barista must modulate the water pre-infusion time at every brewing. The process affects the espresso's aroma and taste.
