In 2019, the Italian Ho.Re.Ca market sold about 30.5 thousand espresso machines. The market value of such sales notably amounted to an estimated 40 million euros. According to CoffeeBi, Italy had the highest number of traditional machines compared to other EU countries where the number of fully automatic machines was significantly higher. As of 2019, about 4.5 thousand fully automatic professional espresso machines were sold in Italy. Traditional and automatic machines differ in many aspects. In the traditional or lever espresso machines, coffee grains get freshly grounded and, most importantly, the barista must modulate the water pre-infusion time at every brewing. The process affects the espresso's aroma and taste.
