Sales value of corn tortillas in Mexico 2013-2022
In 2022, corn tortillas and nixtamal dough sales in Mexico amounted to more than 76 billion Mexican pesos, representing an increase of about 15 percent compared to the previous year. Tortillas are one of the most important ingredients accompanying Mexican cuisine. Corn tortillas are made by processing maize grains through a process called nixtamalization, which consists of soaking and cooking the maize in an alkaline solution before turning them into dough.
