In 2023, the production value of corn tortillas and nixtamalization milling in Mexico amounted to more than 88 billion Mexican pesos. This represents an increase of 13 percent compared to the previous year
Nixtamalization is a process in which the corn grains are soaked and then cooked in an alkaline solution. They are then washed, hulled, and-for tortilla making-milled.
