In 2017, production of corn tortillas and nixtamal-based dough in Mexico amounted to more than 43 billion Mexican pesos, more than two billion more than the year before. Tortillas are one of the most important ingredients accompanying Mexican cuisine. The most traditional kind of tortillas are prepared from a dough made by a grain called nixtamal. Nixtamal is the result of corn going through a process called nixtamalization and is used for the elaboration of other products such as tamales.
