Mexico: establishments preparing tortillas 2014-2017
In 2017, the number of establishments preparing corn tortillas and nixtamal-based dough in Mexico amounted to 85,173 establishments, five more than two years before. Tortillas are one of the most important ingredients accompanying Mexican cuisine. The most traditional kind of tortillas are prepared from a dough made by a grain called nixtamal. Nixtamal is the result of corn going through a process called nixtamalization and is used for the elaboration of other products such as tamales.
