Perception of traditional cuisine in Japan 2023
The leading impression of traditional Japanese food (washoku) was that the meals were healthy, according to a survey conducted in February 2023 in Japan. While over 65 percent of respondents considered the healthy factor a major part of traditional Japanese cuisine, the seasonal aspect left a lasting impression as well.
An important part of washoku is the combination of white rice as staple food served with side dishes like soups, pickled, and grilled fish, which rely mainly on ingredients in season.
